Secret Karim's Style Mutton Korma: The Royal Mughlai Secret

🥘 Ingredients

  • 500gMutton
  • 1 cup, crushedBrown Onions (Birista)
  • 1 cupYogurt
  • 1/2 cupGhee
  • Mace (Javitri), Nutmeg, Green CardamomSpices
  • 1 tspKewra Water

👨‍🍳 Instructions

Step 1 (Searing): Heat ghee in a heavy pot. Add mutton and ginger-garlic paste. Sauté until the meat is browned.

Step 2 (The Base): Whisk yogurt with coriander powder and red chili powder. Add to the meat.

Step 3 (Cooking): Add water and cook on low heat until the meat is 90% tender.

Step 4 (Onions): Add the crushed brown onions. This will thicken the gravy and give it its signature texture.

Step 5 (Aromatics): Add the powdered mace, nutmeg, and cardamom. Add kewra water.

Step 6 (Simmering): Simmer for another 10 minutes until the oil (tar) floats on top.

Step 7 (Serving): Serve with Sheermal or Khamiri Roti.
