Siddu: The Steamed Mountain Bread Secret

🥘 Ingredients
- 2 cupsWheat Flour
- 1 tsp (dry)Yeast
- for kneadingWarm Water
- 1/2 cup Poppy seeds (soaked) or Walnut pasteStuffing
- 2, for stuffingGreen Chilies
- 4-5 cloves, for stuffingGarlic
- for servingPure Ghee
👨🍳 Instructions
Step 1 (Dough): Mix wheat flour and yeast with warm water. Knead into a soft dough. Cover and let it ferment in a warm place for 3-4 hours until it doubles in size.
Step 2 (Filling): Grind the soaked poppy seeds (or walnuts) with green chilies, garlic, salt, and coriander into a coarse paste. Do not add water.
Step 3 (Shaping): Take a large ball of dough, flatten it, and place a generous amount of filling in the center.
Step 4 (Folding): Fold the dough over the filling and seal the edges, shaping it into a semi-circle or an oval log.
Step 5 (Steaming): Place the siddus in a greased steamer. Steam for 15-20 minutes until the dough is cooked through and bouncy.
Step 6 (Serving): Slice the hot siddu and serve with a bowl of melted ghee and mint chutney.
