Sheer Chai: The Pink Salty Tea

🥘 Ingredients
- 2 tspKashmiri Tea Leaves
- a pinch (secret for pink color)Baking Soda
- 1/2 tspSalt
- 1.5 cupsMilk
- 1 tbsp (optional)Cream/Malai
👨🍳 Instructions
Step 1 (The Brew): Boil tea leaves and baking soda in 2 cups of water for 20 minutes until the water turns dark red.
Step 2 (Shocking): Add a cup of ice-cold water and "aerate" the tea by pouring it repeatedly from a height with a ladle for 5 minutes.
Step 3 (The Color): Add milk. The reaction with baking soda will turn the tea a beautiful pink.
Step 4 (Seasoning): Add salt and simmer for 5 minutes.
Step 5 (Serving): Serve hot, topped with a little fresh cream or malai.
