Litti Chokha

🥘 Ingredients
- 2 cupsWheat Flour (Atta)
- 1 cupSattu (Roasted Gram Flour)
- 1 largeEggplant (Bharta Baingan)
- 2Tomatoes
- 2 tbspMustard Oil
- 1 tbspPickle Masala
- 1 tbsp mincedGarlic & Ginger
- 2-3 choppedGreen Chilies
- 1/2 tspCarom Seeds (Ajwain)
👨🍳 Instructions
Dough: Knead wheat flour with water, salt, and ghee into a semi-stiff dough.
Filling: Mix sattu with chopped garlic, ginger, chilies, ajwain, pickle masala, mustard oil, lemon juice, and salt.
Add a few drops of water to the filling to make it moist (crumbly texture).
Make small balls of dough, cup them, stuff with sattu mix, and seal tight.
Roast Litti on coal, cow dung cakes, or in an oven (200°C) until brown and crusty. Dip in ghee.
Chokha: Roast eggplant and tomatoes on direct flame until charred.
Peel and mash them. Mix with raw mustard oil, chopped onions, chilies, coriander, and salt.
Serve hot Litti broken into the Chokha.
