🥘 Ingredients
- 1/2 cupFermented Bamboo Shoots
- 2 boiledPotatoes
- 4-5 medium piecesNgari (Fermented Fish)
- 1-2 (adjust spice)Ghost Pepper (Raja Mircha)
- for garnishSpring Onions/Chives
- to tasteSalt
👨🍳 Instructions
Steam or roast the Ngari (fermented fish) and Raja Mircha until fragrant.
Boil the potatoes and bamboo shoots until soft. Drain water.
In a bowl, mash the roasted Ngari and chilies into a paste with a little salt.
Add the boiled potatoes and bamboo shoots to the bowl.
Mash everything together (traditionally done by hand) to mix the flavors well.
The texture should be a coarse mash, not a smooth puree.
Garnish generously with chopped spring onions or chives.
Serve as a spicy side dish with steamed rice.
