Bathua Raita: The Winter Immunity Booster

🥘 Ingredients
- 1 cup, cleanedBathua Leaves
- 2 cupsThick Curd (Dahi)
- 1 tspRoasted Cumin Powder
- 1/2 tspBlack Salt
👨🍳 Instructions
Step 1 (Blanching): Boil the bathua leaves in very little water for 5 minutes. Drain and squeeze out the water.
Step 2 (Grinding): Grind the boiled leaves into a smooth paste using a mortar and pestle or blender.
Step 3 (Whisking): Whisk the curd in a bowl until smooth.
Step 4 (Mixing): Add the bathua paste, roasted cumin powder, black salt, and a pinch of red chili powder to the curd.
Step 5 (Serving): Serve chilled alongside Bajra Khichdi or Besan Roti.
