Muthia: The Oil-Free Snack Secret

🥘 Ingredients

  • 1 cupBesan (gram flour)
  • 1/2 cupWheat flour (atta)
  • 2 tbspCurd (dahi)
  • 1 tsp, gratedGinger
  • 1, choppedGreen chili
  • 1/4 tspTurmeric powder
  • to tasteSalt
  • 1/4 tspEno / baking soda
  • 1 tbsp (tempering)Oil
  • 1/2 tspMustard seeds
  • 1 tspSesame seeds
  • 8–10Curry leaves

👨‍🍳 Instructions

Mix besan, atta, turmeric, salt, ginger, chili, and curd. Add a little water to form a soft dough.

Mix in Eno just before steaming (optional but makes it lighter).

Shape into small logs and steam 12–15 minutes. Cool 5 minutes, then slice.

Temper: heat oil, crackle mustard, add sesame and curry leaves.

Add sliced muthia and toss gently 1 minute. Serve warm.
