Gulgula: The Sweet Wheat Fritter Hook

🥘 Ingredients

  • 1.5 cupsWheat flour (atta)
  • 3/4 cup, gratedJaggery
  • 1 tspFennel seeds (saunf)
  • 1/2 tsp (optional)Cardamom powder
  • a pinch (optional)Baking soda
  • as needed to make thick batterWater / milk
  • for fryingOil

👨‍🍳 Instructions

Dissolve jaggery in a little warm water and strain if needed.

Mix flour, fennel, cardamom (optional), and baking soda (optional).

Add jaggery water to make a thick dropping batter. Rest 10 minutes.

Heat oil on medium. Drop small spoonfuls—don’t overcrowd.

Fry on low-medium heat until puffed and deep golden (4–6 minutes).

Drain and serve warm.
