- 1.5 cupsWheat flour (atta)
- 3/4 cup, gratedJaggery
- 1 tspFennel seeds (saunf)
- 1/2 tsp (optional)Cardamom powder
- a pinch (optional)Baking soda
- as needed to make thick batterWater / milk
- for fryingOil

Dissolve jaggery in a little warm water and strain if needed.

Mix flour, fennel, cardamom (optional), and baking soda (optional).

Add jaggery water to make a thick dropping batter. Rest 10 minutes.

Heat oil on medium. Drop small spoonfuls—don’t overcrowd.

Fry on low-medium heat until puffed and deep golden (4–6 minutes).
