Fara / Phara: The Desi Momos Secret

🥘 Ingredients

  • 1 cupRice flour
  • 1.25–1.5 cups (as needed)Warm water
  • to tasteSalt
  • 1 tsp (for dough) + 1 tbsp (tempering)Oil
  • 2 tbsp, choppedCoriander leaves
  • 1, choppedGreen chili
  • 1/2 tspMustard seeds
  • 8–10Curry leaves
  • 1 tspSesame seeds

👨‍🍳 Instructions

Bring water to a boil with salt and 1 tsp oil. Switch off heat.

Add rice flour and mix quickly. Cover 5 minutes.

Knead while warm to a smooth dough. Mix coriander and chili.

Shape into smooth logs and steam 10–12 minutes.

Temper: heat oil, crackle mustard, add curry leaves and sesame. Toss fara gently.

Serve hot with green chutney.
